摘要 PURPOSE:To obtain the titled product having improved properties not by fermentation method, by subjecting a raw material consisting of grain flour or an ingredient containing vegetable protein as a main component and water to extrusion molding from an extruder by a specific method, cutting, grinding and sieving it. CONSTITUTION:A raw material comprising rain flour (e.g., wheat flour, corn flour, etc.) and/or an ingredient (e.g., soybean flour, gluten, etc.) as a main component, and water are kneaded by an extruder under heating and pressure, subjected to extrusion molding in the circumferential direction of a tip die, thinly cut in 0.5-20mm width in the direction parallel to the direction of extrusion in a state at <=80 deg.C at <=20wt% water content, dried, ground coarsely, and sieved, to give the aimed product.
