摘要 |
PURPOSE:To carry out the alcoholic fermentation in high cell concentration and high productivity, by using a novel yeast strain [Saccharomyces (FRM17VM 2-4)S1 (FERM P-7799)] having excellent agglutinative property. CONSTITUTION:A yeast strain [Saccharomyces FRM17VM2-4 (FERM P-7795)] having an agglutinative property of 4 in DF value is sporulated, and the obtained spore is cultured to obtain the objective yeast strain having an agglutinative property of 5 DF [Saccharomyces (FRM17VM2-4)S1 (FERM P-7799)]. The yeast is cultured e.g. in a black strap molasses medium having a total sugar content of 15% preferably at 30-37 deg.C and 3.5-6.0pH. |
