PURPOSE:To obtain industrially advantageously a non-hydrophilic anthocyanin pigment, by adding a surfactant, fat or oil and a paste to an aq. soln. or an alcoholic aq. soln. of an anthocyanin pigment. CONSTITUTION:Fat or oil, a surfactant and a paste are homogeneously added to an aq. soln. or an alcoholic aq. soln. of anthocyanin pigment such as a soln. of an anthocyanin pigment in water, alcoholic water, propylene glycol or glycerol. Examples of the fat and oil are animal and vegetable fatty oils, and oils which are solid at room temp. are heated and used in the form of a liquid. Examples of the surfactants are glycerol, sorbitan, fatty acid esters and lecithin. Examples of the pastes are xanthane gum and gum arabic. The circumferences of the particles of the anthocyanin pigment in the resulting suspension are covered with a thin film of the oils and the paste, whereby the pigment is prevented from being made water-soluble and from being gotten out of the film.
