PURPOSE:To remove the irritant smell of garlic, by mixing garlic belonging to Liliaceae family with a solution prepared from MIRIN (sweet SAKE used as seasoning), vinegar, citric acid and albumen, thereby reacting the above components with allyl sulfide compound which is the origin of the irritant smell. CONSTITUTION:1kg of steamed and skinned garlic is mixed with a solution prepared by thoroughly mixing 360cc of MIRIN, 30cc of vinegar, a tablespoonful of citric acid and albumen of two eggs. The mixture is left to stand for 15 days while stirring every other day, and washed with water. The product is added with 1kg of water and two tablespoonful of salt, and left to stand for 5 days. The garlic processed by the above method is washed with running water for 5 days and dried to obtain deodorized garlic. |
