Glutamic acid hydrochloride racemisation

Optionally active glutamic acid hydrochloride is racemised by heating a 20-70% soln., opt. contg. excess HCl and/or inorganic salts, at 160-230 degrees C, in a vat lined with zirconium or tantalum. Racemisation of the D form, followed by resolution of the mixture, permits conversion of i.e. D- to the L-form required for addition to foodstuff.
