PURPOSE:To improve the weakness of the initial sweet taste, the bitter aftertaste, and the heavy sweetness of a stevioside sweetener, and to obtain a low calorie sweetener having sugar like excellent sweetness, by adding a specific amount of L- histidine hydrochloride to stevioside. CONSTITUTION:10-30pts. L-histidine hydrochloride is added to 100pts. stevioside. The stevioside is, e.g. obtained by the ion exchange chromatographic purification, the ultrafiltration, etc. of commercial crude stevioside or a crude stevioside prepared by extracting the leaves or stalks of an aster family vegatable, Stevia rebaudiana Bertoni, with water, hot water, or hydrous alcohol. |
