Drinks having yeast flavour are obtd. by mixing an aq. compsn. (I) contg. nutrients and flavourings with yeast obtd. from a fermentation process but free from fermented prods. at a temp. low enough to prevent fermentation occurring. (I) is either a material which could be fermented to alcohol by yeast, e.g. must, grape or other fruit juice or a non-fermentable material, e.g. whey. In either case it may be obtd. by diln. of a concentrate. |
