PURPOSE:To accumulate a remarkable amount of glutathione in yeast cells, by incorporating a recombinant plasmid of a gamma-glutamylcysteine synthetic enzyme gene in a yeast, and cultivating the resultant yeast in a nutrient culture medium. CONSTITUTION:A gamma-glutamylcysteine synthetic enzyme gene is recombined in a plasmid, and the resultant recombinant plasmid is incorporated in a yeast, e.g. Saccharomyces cerevisiae, having the ability to produce glutathione. The resultant yeast is then cultivated in a nutrient culture medium to give yeast cells. The glutathione is then extracted from the resultant yeast cells and purified. A plasmic vector, e.g. YRp7, YIp1, YEp13, etc. capable of multiplying replicating and multiplying together with the multiplication of the yeast of the genus Saccharomyces is used as the plasmid vector. |
