<p>Bottling and pasteurising process for drinks, such as fruit juices prepd. by the aq. dilution of a concentrate consists of adding quantity of concentrate to each bottle, followed by hot sterilised or pastuerised water to complete the filling of the bottles, these are then hermetically sealed, agitated and cooled rapidly. The water is at 95 degrees C and the bottles are turned over three times so that the whole of the internal surface is rendered sterile by the hot water. The concentrate is mixed and dissolved at the same time. Excessive cooking of the juice is avoided and the prod. is of better quality with excellent storage properties.</p> |
