The cheese mould comprises a cylindrical vessel in which a pressure lid is slidably movable. The vessel including its bottom and the lid are provided with perforations to discharge the whey during pressure of the curds. The upper end of the vessel is provided with a bridge piece or a closure cover to act as rear support for a resilient pressure member arranged between the bridge piece or cover and the lid. This member may consist of a bellows pressurisable by air via a valve on the bridge piece, or of two linkages each consisting of two pivoted levers, the central pivots being connected by a spring. Alternatively the closure cover and the lid may seal relative to the vessel, the space between them being air-pressurisable.
