A method for rapidly cooling a piece of steel in the shape of a hollow body having an orifice at each of its ends, such as a steel pipe, is described, in which a cooling medium is directed in accordance with a substantially circumferential form of circulation around the outside of a steel pipe, applying variable flows of the cooling medium around the external segments of the steel pipe, for which purpose the flow around each segment of the pipe can be varied in accordance with the thickness of the segment.
