The invention relates to a process for chemical decolorisation of blood and cruor. These elements are placed in contact with a precipitation reagent which is a mixture of acetone, water and hydrochloric acid, the mixture being placed in a mixer/grinder rotating at very high speed. The precipitate is washed and dried to give a globin concentrate. The invention applies to the preparation of proteins which can be used in human or animal nutrition.
