The invention relates to a cutting head for mincer (mincing machine), consisting of several individual knives, in particular held on the cutting shaft by geometric closure and axial deformation and radially adjustable, to which is combined each time an adjustment element resting on the cutting shaft, determining the radial position of the knife, which is continuously adjustable. According to the invention, the adjustment element consists of a threaded bolt 3 and of a tapped sleeve 2 located above, one of these parts, in particular the tapped sleeve 2, being linked in a fixed manner to the knife 7 and the other part, radially adjustable with respect to the first, in particular the threaded bolt 3, resting on the face of the cutting shaft 1 opposite to the cutting portion of the knife 7.
