PURPOSE:To obtain efficiently and economically the titled food that has uniform quality, shape, etc. and is slightly broken, by coagulating eggs in a thin film state in a hot solution containing seasoned soup, putting the solution containing the coagulated eggs in containers, and freeze drying them together with the containers. CONSTITUTION:Firstly, the whole eggs or prepared eggs are added to a hot solution or hot water of seasoned soup while it is slowly stirred, so that the eggs are coagulated in a thin film state. Then, the whole solution containing the whole eggs is put in containers, freeze dried conventionally together with the containers, to give the aimed food in a block state. The containers whose interiors are divided into parts with proper shape and size are preferably, because a product of the same shape and quality is obtained. |
