The invention relates to a method of manufacturing puff pastry industrially. The method comprises mixing flour, water, fat, and salt, to form a dough, incorporating fat into the dough in the form of solid distributed lumps, and alternately rolling the dough to form a sheet and to roll out the lumps of fat and stacking several thicknesses of said sheet one on top of the other whereby the dough is progressively formed into a structure in which the rolled out lumps of fat alternate with layers of the dough. |
