PURPOSE:To prepare bean curd containing sporadically and almost uniformly distributed ingredients and having high commercial value, by adding soya milk to a mixture of bittern liquid and ingredients. CONSTITUTION:Ground sesame is mixed with paste of unhulled sesame at a specific ratio. The mixture is thrown together with egg yolk, slit leaves of eggplant, or wakame seaweed cooled and slit after the treatment with hot water, into a bittern liquid adjusted to a specific density, e.g. 20 deg. Be, and stirred. Soya milk having a specific concentration, e.g. 14% concentration and maintained at a specific temperature is charged quickly to the mixture. The soya milk foam generated on the surface of the mixed liquid is removed, and the mixture is left to cool for a specific period. |
