PURPOSE:To make it possible to secure safety operation over a long period of time, by stopping the operation of an evaporation apparatus by interrupting the injection of a scale inhibitor to dispense with scale peel-off work. CONSTITUTION:An evaporation chamber is held under vacuum by a steam ejector 5 prior to the start of operation and each pump begins to rotate while a steam valve 10 is opened to establish an operative state which is, in turn, displayed on an operation panel. If the charging of a chemical agent to a scale inhibitor storage tank 7 is forgotten during operation and the water level in the storage tank 7 is lowered, each pump is stopped by the signal outputted by a water level meter 17 and, further, the system valve 10 is closed to interrupt operation. By this mechanism, the operation of the evaporation apparatus is not performed unless the scale inhibitor is injected and the precipitation of scale in a condenser tube bundle 2, a brine heater or the high temp. part of a flash evaporation chamber 3 can be prevented.
