PURPOSE:To prepare an ice-cream having a firmly attached coating layer, by forming a hydrophilic ice layer such as carrageenan, etc. to the surface of an ice-cream matrial such as solid ice-cream using gum arabic in combination with the carrageenan, etc. CONSTITUTION:A supercooled ice-cream material such as solid ice-cream, ice sherbet, shaved ice, etc. is immersed for about 1-3sec in a colloidal aqueous dispersion or solution of a hydrophilic colloidal substance selected from carrageenan, furcellaran and agar and containing >=3wt% gum arabic. A hydrophilic ice layer is formed on the surface of the ice-cream material by this process.
