PURPOSE:To develop inexpensive and efficient preparation of the titled substance, having a wide application range, by hydroluzing an alpha-methylbenzyl alcohol fatty acid ester by the use of ground liver of mammal or bird. CONSTITUTION:An alpha-methylbenzyl alcohol fatty acid ester shown by the formula I, such as acetic ester, propionic ester, etc. is treated with ground liver of mammal or bird, and hydrolyzed in the presence of a buffer solution. After the reaction is over, the reaction product is extracted with an organic solvent, (+)- alpha-methylbenzyl alcohol shown by the formula II and an (-)-alpha-methylbenzyl alcohol fatty acid ester shown by the formula II is separated and collected by partial TLC, column chromatography, etc.
