A process for continuous wine-making and a device using the process. In accordance with the invention, the must is continuously or semicontinuously circulated in a series of vessels 1, 5, 6, 15 and 16, each corresponding to a stage in the wine-making, the volumes of said vessels being essentially proportional to the time required for carrying out each stage of the process, and heat circulation is created countercurrentwise at least between the different vessels using, at least partially, heat pumps 11-21 whose condenser 12-22 is connected for heat exchange to a vessel 5-15 whose stage of the process is carried out at a relatively high temperature and whose evaporator 13-23 is connected for heat exchange to a vessel 6-16 whose stage of the process is carried out at a relatively low temperature. The invention allows energy savings and easy control of the wine-making process. <IMAGE>
