PURPOSE:To provide a polypeptide containing a specific partial amino acid sequence, having the activity of cyclomaltodextrin glucanotransferase and useful for the production of cyclodextrin and glycosylsucrose from starch, etc. CONSTITUTION:The amino acid sequence of a polypeptide having the activity of cyclomaltodextrin glucanotransferase and known as macerans amylase pro duced by Bacillus macerans was investigated and it has been found that the enzyme contains one or more sequences selected from 7 kinds of amino acid sequences of formulas. It has also been found that the partial sequences are arranged in the order of (a), (b), (c), (d) and (e) from the side close to the N- terminal. The polypeptide has a molecular weight of 70,000+ or -10,000 by SDS- polyacrylamide gel electrophoresis, and a specific activity of 200+ or -30 unit/mg- protein. |
