发明名称 METHOD FOR PRESERVING FRESHNESS OF FOOD
摘要 PURPOSE:To preserve freshness in a method for preserving the freshness, preventing spoilage, and preserving a food safely, by placing the food in a water vapor atmosphere of an aqueous composition containing an iron compound, L- ascorbic acid and alum. CONSTITUTION:An aqueous composition containing an iron (II) compound, e.g. ferrous sulfate or ferrous chloride, L-ascorbic acid and alum is prepared. A food is kept in a water vapor atmosphere of the aqueous composition, and the water vapor atmosphere is always partially exchanged with the fresh atmosphere to keep the atmosphere containing the active constituents in an active state. The freshness of a perishable food, e.g. vegetable, fruit, meat, fish or shellfish, can be preserved for a long period, and spoilage thereof can be prevented.
