PURPOSE:After SUSHI pieces are formed, they are wrapped with a material of gas barrier properties under replace with a gas, sterilized with heat, then rapidly refrigerated to give the frozen SUSHI pieces which are storable for a long period of time and keeps high commodity value even after storage. CONSTITUTION:SUSHI pieces are formed, wrapped with a material of gas barrier properties such as a packing material of retort food, while the air is replaced with a gas such as nitrogen. Then, the packages are sterilized by heating them higher than 100 deg.C and rapidly refrigerated. The product can stand the storage for a long period of time and keeps high quality as a food product after storage. |
