摘要 <p>PURPOSE:In a process wherein rice with low ater content, for preparing SAKE (liquor), is humidified and adjusted to any desired water content of grain granule, to shorten humidifying time and to improve operation efficiency, by humidifying rice with low ater content, for preparing SAKE, in such a way that humidifying ratio is increased and changed stepwise depending upon state of change of water content of grain particle. CONSTITUTION:The moistening control device 1 having the wet air blowing device 20 is equipped with the moisture meter 26, and the moisture meter 26 is electrically connected to the wet air blowing device 20 through the control circuit 27 to increase and to change humidifying ratio stepwise depending upon state of change of measured water content of grain granules. Namely, in a process wherein rice with low water content, for preparing SAKE, is moistened and adjused to any desired water content of grain granule, humidifying ratio is increased and changed stepwise depending upon state of change of grain granule and the rice is moistened. Consequently, water absorption properties of rice for preparing SAKE is rationally increased, the humidifying time is shortened, and operation efficiency can be extremely improved. Furthermore, automatization of change operation of water content can be attained, and high-quality rice with given water content, for preparing SAKE, free from breakege, can be mass produced surely and rapidly.</p>
