PURPOSE:To obtain a tasty food having a flavor, by coating the surface of roughly pickled walleye pollack roe with a seasoning consisting essentially of ground unrefined soy, and pickling the resultant roe while pressing with a light stone for a suitable period. CONSTITUTION:The surface of roughly pickled walleye pollack roe 2 prepared by pickling in salt water for about one week is coated with a seasoning 3 consisting essentially of ground unrefined soy and pickled while pressed with a light stone for about 3-5 days to give the aimed cod roe 1 containing the unrefined soy as the final product. THe seasoning 3 is produced by the following method; For example, 300g unrefined soy, 60cc sweet SAKE, 70g sugar, 13g simple Guinea pepper 7g chemical seasoning and 30cc SAKE are prepared. The unrefined soy is fully ground in an earthenware mortar, and the sweet SAKE, sugar, simple Guinea pepper, chemical seasoning and SAKE are mixed therewith and fully ground. In this case, the resultant mixture is thoroughly ground until viscosity and ouster are produced. Thus, the aimed tasty cod roe, containing the unrefined soy, and having a flavor can be obtained. |
