<p>PURPOSE:To prepare low-class spirits having characteristic flavor and good taste, by using peanut in a stage of preparation process of low-class distilled spirits. CONSTITUTION:Low-class distilled spirits is prepared by main processes comprising KOJI preparation process, raw low-class distilled spirits preparation process, and distillation process. In the operation, steamed rice, steamed wheat, etc. prepared by a conventional procedure is blended with peanuts steamed separately at normal pressure or under pressure or with roasted peanuts, the blend is inoculated with a KOJI mold, and a KOJI is prepared. Or, a raw material which is being treated in the low-class distilled spirits preparation process is blended with the steamed rice, steamed wheat, etc. prepared by conventional procedure and steamed peanuts or roasted peanuts.</p> |
