PURPOSE:To obtain a powdery or granular liver food almost free from the characteristic taste and smell of liver, by treating the powder of an edible animal liver with a solution of a specific coating agent in a fluidized-layer granulating drier. CONSTITUTION:The liver of an edible animal (e.g. liver of cattle, pig, etc.) is dried and pulverized under mild condition preventing the influence of heat and oxygen, e.g. by using a vacuum freeze-drier, etc. The dried powder is treated with a solution of zein or casein or a composition composed mainly thereof, in a fluidized-layer granulating drier to obtain a powdery or granular liver food. The characteristic smell of liver is eliminated because the component of the liver is coated with zein or casein and is protected from the influence of oxygen. It can be mixed and heated in various food raw materials without causing the breakage of the coating film and the generation of the liver smell. |
