PURPOSE:To produce a cooked food having improved sense of eating and flavor, etc., by using a product obtained by treating fish meat with an enzyme or a microorganism as part of raw materials. CONSTITUTION:Fish meat is treated with a proteolytic enzyme and/or a microorganism capable of digesting proteins at 0-60 deg.C for 5min-30 days to give a product containing preferably 20-50%, based on the total nitrogen-containing components, water-soluble nitrogen-containing comlonent. The above-mentioned product in an amount of 0.1-40wt% expressed in terms of solid is mixed with 5-30wt% fresh and/or synthetic cream, 5-30wt% ground fish meat and common salt, and the resultant mixture is coagulated under heating. |
