PURPOSE:To produce a composite material of KONJAK (devil's-tongue) and bean curd having improved flavor and feeling, by coagulating refined flour of KONJAK (devil's-tongue) or a hydrolyzate thereof and soybean protein with a protective colloid agent. CONSTITUTION:0.5-3wt%, based on the product, protective colloid agent, e.g. sodium cellulose glycolate or carrageenan, and water are added to one pts.wt. refined flour of KONJAK (devil's-tonque) or a hydrolyzate thereof, and the resultant mixture is stirred at a suitable temperature to give a colloidal swollen solution. Preferably 5-85pts.wt. soybean protein is mixed with the resultant solution, and water is added thereto. The resultant mixture is then stirred, matured, heated and molded. |
