A method of manufacturing a caseinate including introducing a casein in particulate form entrained in air into a mixing vessel as a free falling cylindrical curtain. The curtain is then sprayed with an alkaline solution and the sprayed particles are allowed to fall over a downwardly extending path to a fluidised bed at the base of the mixing vessel. The particles are then heated in the fluidised bed with a stream of heated air, the sprayed particles are discharged from the bed and then reacted with water to produce a solution of caseinate. The method is particularly but not exclusively used to produce sodium caseinate. |
