PURPOSE:To provide a sweetener composed of a clathrate compound of cyclodextrin and alpha-L-aspartyl-L-phenylalanine methyl ester, soluble easily in water, and having mild taste similar to sucrose. CONSTITUTION:A clathrate compound of cyclodextrin and alpha-L-aspartyl-L-phenylalanine methyl ester at a weight ratio of 100:0.3-50, prepared by the process for the production of conventional cyclodextrin clathrate compound. |
