EMULSIFYING/SOLUBILIZING AGENT

PURPOSE:To obtain an emulsifying/solubilizing agent having excellent hydrophilic nature and safty and being stable for heat and light by composing essentially of an ester of maltotriitol and a higher fatty acid. CONSTITUTION:An emulsifying/solubilizing agent is composed essentially of an ester obtained from maltotriitol having >=70% purity and a higher fatty acid. Surface-active agents having a wide range from high HLB to low HLB whose hydrophilic natures are high and low respectively can be obtained by adjusting the degree of esterification in a process. The agents having 4-19 HLB and the degree of esterification from mono-ester to hexa-ester are obtained. The emulsifying/solubilizing agent has an extremely high hydrophilic nature and excellent solubility in water. The agent is stable for heat and light and the browning isn't caused even if it is used for emulsification at a high temperature. Furthermore, its toxicity is very low and is extremely safe as a surface-active agent used for human body.
