<p>1. Process for beer production which consists of treating the malt in the course of a prior mashing phase, with a celulase adapted to convert the crystalline cellulose present in the malt, into amorphous cellulose, without modifying the nature of the sugars present in the finished product, namely the beer obtained, and then subjecting the thus-treated malt to brewing, fermentation and filtration phases, wherein the celulase employed is a celulase having a preponderant C1 enzymatic activity and a weak bêta-glucosidase activity of fungal origin and particularly obtained from Trichoderma viride or from Trichoderma reesei.</p> |
