PURPOSE:To eliminate bitter, astringent and actrictive tastes, etc. of an extract of a peony and obtain a food and drink having the original efficacy, e.g. sedation, by incorporating alpha-glycosylpaeoniflorin obtained from paeoniflorin in the extract of the peony with the food and drink. CONSTITUTION:For example, an aqueous solution containing paeoniflorin in an extract of a peony and an alpha-glucosyl sugar compound, e.g gelatinized starch, is reached with an alpha-glucosyl transferase to give the aimed alpha-glycosylpaeoniflorin. The resultant alpha-glycosylpaeoniflorin is incorporated in a drink, food and the like. |
