In this publication, a process for the production of sausagemeat is described. According to the process, the various meat types are supplied according to a formula available in the control centre (OK) from vessels (S3...Sn) via a metering vessel (AS) into the cutter (1), and the milk powder, potato flour and water required are fed to the cutter (1) in order to be mixed there with the meat. According to the invention, the powder and the flour are metered in liquid form and the slurry, composed of powder and flour and water, prior to feeding into the cutter (1) is kept in constant agitation to avoid settling. By means of the invention it is possible, inter alia, to avoid the handling of pulverulent dust-forming raw material as a free bulk good in the production areas. |
