PURPOSE:To provide a yeast cell containing a large amount of glutathione and having high capability to produce and accumulate glutathione, by the aerobic cultivation of a methionine-analog sensitive mutant obtained by a specific two-stage mutagenic treatment. CONSTITUTION:A yeast belonging to e.g. Saccharomyces genus is subjected to the mutagenic treatment with physical mutagens such as ultraviolet radiation or chemical mutagens such as N-methyl-N'-nitro-N-nitrosoguanidine to obtain a methionine-analog sensitive mutant having 100 times higher resistance than the parent strain and the strain is again subjected to a mutagenic treatment to collect a methionine-analog sensitive mutant. The methionine-analog sensitive mutant obtained by the above tow-state mutagenic treatment is cultured aerobically in a medium composed of molasses, ammonium sulfate, potassium phosphate, etc., at 20-40 deg.C and 3-7pH to obtain a yeast strain capable of producing and accumulating a large amount of glutathione in the cell. |
