PURPOSE:To prepare the titled soy sauce, by bringing soy sauce into contact with a strongly acidic cation exchange resin of Ca and K type, eluting Ca ion and K ion in the soy sauce so that change of pH of soy sauce to acidity side is prevented, and Na ion is removed. CONSTITUTION:A strongly acidic cation exchange resin of free type is treated with an aqueous solution containing K ion, then treated with an aqueous solution containing Ca ion, to give a strongly acidic cation exchange resin of Ca and K type. Soy sauce is brought into contact with the cation exchange resin, so that Ca ion and K ion are eluted in the soy sauce. Consequently, soy sauce can be enriched with Ca without causing increase in anion component which has influence on flavor of soy sauce. |
