PURPOSE:To remove the bitter and astringent taste from a processed soybean product such as soya milk, aqueous solution of separated protein, etc., by injecting carbon dioxide gas into an aqueous solution of soybean protein used as a raw material of the processed soybean product. CONSTITUTION:Carbon dioxide gas is injected into an aqueous solution of soybean protein. The amount of the gas is preferably 2-16l per 100g of the protein in the solution. Preferably, the aqueous solution is heated at 80-150 deg.C before, during or after the injection. |
