PURPOSE:To prepare vinegar of ginseng useful for health, by immersing root of ginseng in vinegar, aging it, adjusting the acidity of vinegar, taking out the root of ginseng, filtering the vinegar, putting the vinegar and the root of ginseng in a container, sterilizing them. CONSTITUTION:Root of ginseng is washed with water, sterilized in a steam atmosphere at 110 deg.C for about 10min, subjected fully to acetic acid fermentation, and immersed in vinegar of rice. An amount of the root of ginseng in the operation is about 0.5-1.2wt% based on the weight of the vinegar of rice. The root of ginseng is immersed in the vinegar of rice, it is aged in this state at normal temperature for about 1 month, the acidity of the vinegar of rice is adjusted to about 4.5-4.7wt%. Then the root of ginseng is taken out from the vinegar of rice once, and the vinegar of rice is filtered. The vinegar of rice and the root of ginseng taken out are packed into a container, the container is sealed hermetically, the temperature of the contents is heated to about 75-85 deg.C to sterilize the contents. Consequently, vinegar of ginseng having effects of both ginseng and vinegar, useful for health, having medicial effect, easily drinkable, can be prepared. |
