<p>Food is heated and steamed in an enclosed chamber in which satd. steam of >=1 atmosphere is distributed along the walls. It is circulated at a high enough velocity to move the steam-enriched steam/air mixt. constantly concentrically inwards towards the food and to carry it away from its centre. This provides a simple and economical method for a fast simmering of food. The food is heated uniformly and the process is easy to control.</p> |
