发明名称 PREPARATION OF KONJAK
摘要 PURPOSE:To produce calcium-enriched KONJAK (paste made from the starch of Devil's tongue) having delicious taste and excellent palatability, by adding calcium powder originated from an animal sourse to the raw material of KONJAK. CONSTITUTION:For example, a raw material such as shrimp, chicken, beef, etc. is dehydrated in an oil in a short time, and deoiled with a continuous extractor, and the obtained animal calcium powder is mixed with KONJAK powder. The water in the stirring tank 1 is heated at about 60 deg.C with steam, and the mixture of the KONJAK powder and the calcium powder is added to the hot water under stirring with a stirrer to obtain a KONJAK paste. The KONJAK paste is transferred to the kneading machine 2, and mixed with a solution of calcium hydroxide sent from the tank 3. The mixed and stirred product is poured into the casting frame 4, left to stand to effect the solidification, transferred to the cutting tank, and boiled in water at >=80 deg.C to obtain a KONJAK.
