PURPOSE:To obtain an easily cookable food having high physiological activity and excellent nutrient, by using sprouted sesame within a specific period after sprouting. CONSTITUTION:A food composed of sprouted sasame within 1 week after sprouting. The sprouted sesame within 1 week after sprouting is rich is ascorbic acid and gamma-tocopherol and has excellent novel phenolic antioxidation activity. There are a number of species in sesame, and the antioxidation activity of the sprouted sesame differs between the species, however, the activity is high within 1 week after sprouting in most species. The sprouted sesame can be produced by immersing the seeds of sesame in water for a night to promote the sprouting of the seed, scattering on sands, stones, mesh, cloth or foamed plastic, immersing the bed to an extent to soak the seeds with water, and aerating the seeds at intervals. The sprouting temperature is about 20-30 deg.C, and the seeds are shielded from direct sun light. The sprouted sesame is collected within 1 week after sprouting. |
