In a method and a device for cutting open fish, even those of different sizes, especially trout, by machine, and for removing the innards, the fish (8), with their bellies pointing upwards and their heads in front, are successively moved on a conveyor (5) which is provided with reception devices, the throats of the fish are cut transversely to the longitudinal direction of the fish, the belly is cut open longitudinally from the transverse cut to the anus and then the innards are removed. So that even fish of different sizes can be killed individually without damage, the fish (8), depending on its size, is given a cut in the shape of an obtuse angle pointing in the conveying direction in its throat region, and the belly is cut open at a height above the conveyor (5) which depends on the size of the fish. The belly flaps formed in this way are folded outwards, and then the fish (8) is cut in two in the gullet region, in a vertically adjustable fashion, and the innards are sucked out of the folded-open belly in a vertically adjustable fashion, using sub-atmospheric pressure. Then the renal skin of the fish is slit slightly and the kidneys are washed away by water under pressure and the belly cavity is simultaneously rinsed out. <IMAGE>
