PURPOSE:To obtain a sausage of paste sausage type and a sausage of soft sausage type, by blending a raw material for sausage with pullulan in a specific ratio. CONSTITUTION:A raw material for sausage is blended with 3-25wt% pullulan to give a nonviscoelastic sausage. The same raw material is blended with <3 wt% pullulan to give a low viscoelastic sausage. The nonelastic sausage is a paste sausage type and the low viscoelastic sausage is used as a soft sausage type or a spread food. |
