摘要 PURPOSE:To prepare a spread having harmonized, blended flavor, by immersing a vegetable and/or a fruit as it is or in a ground state and a saccharide in fruit wine or distilled liquor, storing it for a long period so that it is aged, adding it to edible fats and oils. CONSTITUTION:Seasoning, flavor imparter, coloring matter, preservative, etc. are optionally added to emulsified edible fats and oils or edible fats and oils during emulsification, the blend is properly heated, cooled, stirred, adjusted, etc., to give a spread. In the operation, a vegetable and/or fruit which is as it is or ground or cut, and a saccharide are immersed in fruit wine or distilled liquor, it is preserved for a long period and aged. It is added to the edible fats and oils. 10-60wt% solid part, liquid part or transparent solution part of the aged material based on the spread is added to it. The preferable storage condition is <=30 deg.C and >=2 monthes. Consequently, the spread having a novel harmonized blended flavor can be prepared.
