PURPOSE:To prevent the lowering of the quality and taste of rice for a long period, by dehydrating rice grains with hot oil, and storing the treated rice. CONSTITUTION:Rice is immersed in water for a definite time interval, drained, and thrown into an animal oil or vegetable oil heated at about 100 deg.C in a cooker. The heating of the oil is carried out indirectly by pressing steam into the heating jacket of the cooker. The pressure in the cooker is maintained to a slight vacuum at the initial stage of heating, and a nearly complete vacuum at the latter stage thereof. The rice is taken out of the cooker to effect the dehydration by the heat of the oil, sprayed with a deoiling agent such as n-hexane, separated from the oil, and formed to a plate having a definite shape. The formed rice is stored in a cold place. |
