Machine for mechanically treating tuber-type food stuffs, characterised in that it comprises a perforated cylindrical drum equipped with means 5, 6 for driving in rotation, a cylinder 7 equipped with bristles 11 over its entire surface, being arranged inside this drum, the said cylinder being equipped with means 13, 14 for driving in rotation in the opposite direction from that of the said drum. The invention applies particularly in the treatment of potatoes after the steaming operation intended next to permit, in the operation performed in the machine according to the invention, separation of the potato from the skin and from the thin layer of cooked potato. <IMAGE>
