The flushing air fed to the oven space (1) of a burner-heated automatic wafer (waffle) baking machine for cooling the bearings and as secondary air for the burners (3) is removed by suction via a wafer (waffle) sheet removal and dough inlet station (4) and is mixed with hot exhaust gas which is taken off from the exhaust gas flue (6) of the automatic wafer (waffle) baking machine. When the flushing air mixture contains about 70% exhaust gas from the exhaust gas flue (6), the heat losses of the automatic wafer (waffle) baking machine are reduced by about 30% by the exhaust gas. <IMAGE>
