<p>Saccharomyces cerevisiae hybrids NCYC 995 (I) and NCYC 996 (II) are new. - Pref. (I) and (II) are obtd. from the strains described in US4318929 and US4318930 by the method described in BE-862191. Also claimed is the prodn. of compressed fresh yeasts and dried yeasts contg. (I) or (II). The compressed yeasts have a solids content of 28-35%. The dried yeasts contain at least 92% solids and are pref. in the form of fine porous granules having a solids content of 94-97% and contg. an emulsifier. - (I) and (II) are esp. useful for bread making. They can be grown on sugar beet molasses in higher yields than known strains, can be dried to a solids content of 92% or more in the presence of an emulsifier, and have the same activity whether rehydrated at 38 or 20 deg.C. They may also be used for brewing.</p> |
