PURPOSE:To obtain a filamentous food which can be eaten in the same manner as SOMEN (a kind of very thin white vermicelli made of wheat flour) and usable as a vinegared dish or ingredients of soup, by forming a ground raw material of KAMABOKO (boiled fish paste) in the form of sheet, heating in a steaming pot without immersing in boiling water and slitting to filaments after cooling. CONSTITUTION:The ground raw material of KAMABOKO is extruded through the extruder nozzle 2 in the form of a sheet and the sheet is heated and gelatinized with steam and infrared burner, etc., during the transportation with a plate conveyor 3. The gelatinized sheet is transferred to the second plate conveyor 5, cooled and slit in the form of filaments with the cutter 7. The filamentous food is washed to remove slime and obtain the objective food free from stickiness and eatable in the same manner as SOMEN. |
